Our new decaf coffee from Mexico uses an all natural sugar cane processing method of decaffeination. This process utilizes natural enzymes found in the sugar cane plant, and maintains the integrity of the bean's flavor. Similar to the Swiss Water Process, this method is a more natural way of creating decaf coffee. We prefer this method to Swiss Water Process because it is more environmentally friendly, and it strips less of the coffee's natural flavors, providing you with a full and delicious cup.
